What we'll do

・Sake is in the same category of fermented liquor as wine and beer. Fermented beverages are alcoholic drink made when yeast ferments alcohol from the agricultural crops used. That fermentation process differs for each type of drink, and a unique characteristic of sake is that it uses a sophisticated production method called "multiple parallel fermentation".
・There are many types of sake, which has different flavors, aromas and tastes, mainly depend on rice, water, rice koji, yeast and the brewing methods.
・One unique characteristic of sake is that it contains a lot of amino acids, which are responsible for "Umami". Sake is an excellent pairing for traditional Japanese dishes. Furthermore, the Umami present in sake makes it a great match for western dishes as well as other Asian cuisines.
・In this tour, we visit two sake breweries at Ashigara area near Hakone. We leave either Tokyo or Shinjuku station in the morning. It takes about an hour and a half by train to reach the first brewery. We eat lunch at a local restaurant before visiting next sake brewery. At each sake brewery, we see the actual process how to make sake and enjoy sake tasting. We will be back in Tokyo until the evening.

    Nakazawa Sake Brewery

    Nakazawa Sake Brewery was established in 1825. This Brewery has been run by a continuous line of 11 generations. The brand "Matsumidori" was given by the landlord of Odawara during the Edo era. The Sake is made with a large amount of good quality underground water from Tanzawa mountains.

    Inoue Sake Brewery

    Inoue Sake Brewery was established in 1789. The Brewery owes its start to a single sake bottle-shaped stone which the sixth generation Yoshichi Inoue stumbled over and that inspired him to launch the brewery. The famed brand, "Hakone-yama" was registered as a trademark in 1967 for exportation to Europe.
