Suzuki Sake Brewery, located in Daisen City, Akita Prefecture, is a historical brewery founded in the early Edo period, now famous for its main brand, Hideyoshi. Excluding the New Year's period, brewery observation tours take place throughout the whole year, at which participants can see the manufacturing of sake brewing at close hand inside a historical building that was reconstructed during the Meiji period. Inside the brewery are giant wagama kettles for steaming rice, lacquerware casks for wringing out the sake, and other tools for sake brewing that let visitors feel the style of historical breweries. Arguably the biggest allure of the brewery observation tours is the tasting and comparing of nihonshu sake, after which visitors can purchase any sake they liked at the shop. Also within the warehouse is an archive where the possessions of generations of the Suzuki family have been stored, including biographies, antiques, and gifts from Toyotomi Hideyoshi and Oda Nobunaga. The historically valuable documents and works of art that are on display are part of what makes this particular brewery unique.
Participation in a brewery observation tour requires advance reservations from the official website. Especially if an English guide is necessary, make sure to complete the reservation at least three days before you plan to visit.
