Domaine Takahiko is a winery that was founded in 2009 in Yoichi Town, Hokkaido. The owner Takahiko Soga says that he doesn't want to be a brewer, but rather a vigneron (winegrower). Only one variety of grape is grown in the vineyards, pinot noir, and the grapes are cultivated with great care. They have a unique approach to their brewing methods as well, and they produce wines that have umami and delicacy. In spite of the small production volume, Mr. Soga's wines that include this umami and aftertaste like dashi soup stock are garnering attention from all over the country.
